Each cheese that comes out of our dairy is the result of a process full of dedication, respect for tradition, and love for the authentic. At Quesos Maíta, we do not rush. We follow the times dictated by nature and the teachings passed down from generation to generation.
Own Farm Milk
Everything starts with the best raw material: fresh milk from our own farm, carefully tended, without hurry or intermediaries. We know what we give to our animals and how they live.
Traditional Process
We use artisanal methods: we curdle the milk patiently, mold each piece by hand, and let time work its magic. No additives, no shortcuts.
Aging with History
Our cheeses mature in conditioned spaces, where temperature, humidity, and silence accompany their evolution. Some rest for weeks, others for months. Each one acquires its own character, like people: with the necessary time and care.
